Amazin-Mazin Fish Soup recipe from Ireland! sooooo good.
killer fish soup with chilli and cilantro. Meet the next MRs. Gordon Ramsey! (taken from an Irish tourist mag, by paul rankin, actually. Surprisingly not Too spicy, even adding a little red pepper (the cream subdues the spice).
2 tbsp butter, 1 large onion finely chopped, 1 stick celery finely chopped, 4 oz (large handful) sliced mushrooms, 3 tomatoes diced, 1 tbsp tomato paste, pinch saffron (not ALWAYS necessary, since this is a luxury spice), 1 tbsp chilli paste (I just cut up a thai chilli with seeds) 1 litre stock(chicken, fish or veggie) salt (not too much!), pepper, 1/3 to 1/2 cup half and half or cream, 3 cups mixed fish cubes or seafood chunks (I used mussels, shrimps, and haddock) 4 tbsp FRESH cilantro, shredded.
melt butter in saucepan, add onions, celery, and mushrooms, sweat for 10 mins. Add tomatoes, tomato paste, small pinch saffron, chilli paste and stock. Bring to boil, skim off foam (if any) and boil for 15 mins. taste for salt and pepper, add if necessary. stir in about 1/3 to 1/2 cup cream or half and half, and all of the fish. Bring just to a boil, remove from heat, cover, and let sit for 5 mins. Serve with plenty of chopped cilantro on top. Del-i-c-i-ous! best soup yet. I added 1 carrot to the soup for color, and Josh added a ton of black pepper.
